Ever wonder what the difference is between your turkey’s white meat and dark meat? It’s the difference in muscle fiber types. The dark meat of your turkey dinner is composed of slow-twitch endurance muscle fibers and therefore contains lots of myoglobin (the protein that transports oxygen inside your muscles), which gives the meat its darker color. The white meat is composed of fast-twitch sprint muscle fibers and doesn’t have a lot of myoglobin because those fibers don’t need oxygen to function. Unfortunately, the type of meat you eat has no impact on your endurance or sprint ability. So if you want to run a marathon, you’re just going to have to do the endurance training. Happy Thanksgiving!
